Vietnamese food is fast emerging as one of the most popular of all Asian cuisines. Famous for its lively, fresh flavours and artfully composed meals, Vietnamese food is the true “light and healthy cuisine” of Asia. In simple terms, it is lighter and more refreshing than Thai food – using crisp, uncooked vegetables, subtle seasonings, raw herbs, and unique flavour combinations. Often referred as textural, with fresh, sharp flavours, it is also more tropical and fragrant than Chinese food.

Given that rice is the staple of the Vietnamese diet, meals are creatively prepared with com (plain white rice), banh (rice paper), pho (flat rice noodles) and bun (vermicelli).
Vietnamese food also reflects its Chinese and French influences and it has numerous regional differences specifically in the north, central and south. In central Vietnam, around the ancient royal capital Hue, where our chefs hail, the food may contain influences of the former court cooks.
